So, I'm making my brother and his fiancée's wedding cake and they have asked for a croquembouche. "What's that?" I hear some cry. Well, it is a traditional French celebration cake, made up of lots (in this case probably 200) profiteroles stuck together with caramel in a big pointy tower.
Today I decided to have trial run one. I've already tested the profiteroles on them and they were happy so this is the big version. I've made a batch of profiteroles and they are now cooling. I've also just made some créme patissière which is also cooling. I'm going to mix that with the same amount of whipped cream, flavoured with orange liqueur, fill the profiteroles and then stick them together in a pyramid with orange caramel.
Fingers crossed they like it when they come over later.
